The name 'Draconis' is the latin genitive noun for 'dragon.' I was a pretty big gamer in my youth and since i had such fond memories, i decided to name the winery after the one creature that reminds me the most of them. The wine is made 'reductionist' style; basically, the wine is just kept in the barrel without any racking, fining, or filtering (and without the presense of oxygen). So, i always tell my customers to "let them open up" - which you really need to, and in some cases, for the better part of 45 minutes or more; it's just the way they're made. I don't really provide any tasting notes, other than the fact that all the wines are very smooth, silky, and with excellent concetration. There's no residual sugar in any of these, so they certainly aren't sweet - although the fruit really comes out when you stop masking it with sugar ...
